Serves 4:
500 ml coconut milk
2 tablespoon tapioca pearls
45 gr sugar powder + 2 tablespoon for banana caramel crust
1 banana
* Place the coconut milk, tapioca pearls and sugar (45gr) into a saucepan.
* Bring to the boil and reduce over low heat. Cook 20 to 30 minutes or until pearls are translucents, stirring constantly.
* Cut the banana into small pieces and place them on a baking tray covered with baking paper.
* Spread some sugar generously and caramelize the top thanks to your gas burner.
N.B: to make the perfect caramelized crust, place your gas burner 5 cm to your banana pieces and make brush movements to get an homogeneous crust.
