Summer Bread :: Food




There is a bakery in Biarritz (Loubère) that makes delicious spanish sausage (also called 'chorizo') I am fond off and as I don't have that much opportunities to go back over there, I've decided to make my own at home.


I also made other versions with emmental cheese and black & green olives for an extra kick and here I was with the best breads ever !


Makes around 10 breads:

400 gr special bread flour
250 to 350 ml water (I used 350 ml but it was so far too much and I had to add over than 100 gr extra flour so I suggest you starting with 250 ml water and adding a bit at times if your dough is too dry until it gets moist but not sticky)
1 packet active dry yeast
1 tsp salt
1 tsp sugar
1 tbsp olive oil

Filling:

Black & green olives
Emmental cheese, diced and shredded
Spanish sausage
or whatever you like !

I suggest you making the dough the day before and allowing it to double size during the night so you will just have to make the breads and bake them the D-day.

* Put the yeast and sugar into the lukewarm water. Stir and set aside for 10 minutes or until foamy.
* In a big bowl mix together flour and salt. Add the water mixture, the olive oil and mix well with a wooden spoon until having a moist but non-sticky dough. If it is too dry add more lukewarm water, if it is too moist add flour, a bit at time for each.
* Knead onto a well-floured area for few minutes.
* Place the dough into a big bowl, cover with a linen and allow to double size.
* Pre-heat your oven on 260°C.
* Place the dough onto a well-floured area and divide into small balls (number depending on how much and how big you want your breads to be).
* Fill and top the breads according your taste. Just a tips for the cheese ones: I put some diced Emmental cheese into the bread to add extra cheesy and soft texture.
* Place the breads on a baking tray covered with baking paper and bake for 15 to 20 minutes or until they are golden-brown.
* Eat your bread warm if possible, and don't hesitate to heat them up few minutes into your oven before serving !
