I wanted to make some madeleines since a long time, but I most of all wanted to make some with original flavors:
Lime/Vanilla, Blueberries/Candied ginger, Black sesam/Raspberries
And I also dipped them into melted white chocolate, to strengthen the "Yum Effect" ;)
After several failed attempts I finally found out that the best (and easiest) way to cook them is to simply bake them at 220°C. No need to bother yourself with temperature variations, and that's a pretty good news isn't it?
Makes 25 madeleines:
2 eggs
90 gr sugar
110 gr flour
50 gr butter
1/2 tbsp dry yeast
(add 1 tsp vanilla extract if you want to make the original recipe of madeleines)
Pimp my madeleine:
Lime/Vanilla
zest from 1/4 lime
seeds from 1 vanilla bean
zest from 1/4 lime
seeds from 1 vanilla bean
Candied ginger/Blueberries
2 big candied ginger pieces
some blueberries (fresh or frozen)
some blueberries (fresh or frozen)
Black sesame/Raspberries
1 tsp black sesame past
1 or 2 tsp frozen raspberries breaks
1 or 2 tsp frozen raspberries breaks
100 gr white chocolate
2 tbsp single cream
2 tbsp single cream
* Preheat your oven on 220°C.
* Melt the butter and set aside.
* In a large bowl mix the eggs and sugar together until creamy.
* Add the flour and yeast, stir.
* Add the melted butter, stir.
* Divide the mixture into 3 small bowls and add the different ingredients combination in one of each (lime zest/vanilla seeds - diced candied ginger/blueberries - black sesame past/raspberries breaks).
* Pour the tins into their 3/4 and put in the oven for 8 to 10 minutes, or until well golden with a bump on top.
* Allow to cool completely on a grill.
* Melt the white chocolate with the single cream and pour into the bottom of the madeleines.
* Put them upside down on a grill until to let the chocolate harden.
