Sunday Recipe

French crepes & almond honey.

In France we have that day we used to call "Chandeleur". That special day its okay to eat plenty of crepes until you get sick of them,  that much crepes your fingers get oily and in less than an hour the Nutella pot is empty. And we all love this day. Yes, we might eat crepes during the other 364 days of the year - not that often actually -  but its not the same. The felling is not the same.
As we were in Portugal for the Chandeleur and as I can't miss this day, I have made crepes this week-end - some with lemon & vanilla, some with orange flower water - pretending we were a week before.
And it worked well ! It was also a good excuse to try this yummy organic honey & roasted almonds I bought in a little local farmers food store in Ericeira (Portugal) during our trip.


French Crêpes

200 gr stiffed flour
1 tablespoon oil
3 eggs
500 ml milk
1 teaspoon fleur de sel

zest from half lemon + 1 teaspoon vanilla extract
1 tablespoon orange flower water

* In a gib bowl mix the stiffed flour, fleur de sel, eggs and oil.
* Add the milk stirring constantly until you get a smooth mixture. If they are some lumps mix with an electric blender for few seconds.
* Pour the half of your mixture in an other bowl.
* In one of them add the half-lemon zest and vanilla extract, mix. Do the same in the other bowl with the orange flower water.
* Set aside for 30 minutes to 1 hour and bake your crêpes into a non-sticky frying pan well-oil onto high heat 2 minutes or so each sides.


Honey & roasted almonds


                                                        1 honey jar (organic if possible

                                                            a dozen bleached almonds

Roast your almonds on a baking tray covered with baking paper into a 150° Celcius preheated oven for 15 to 20 minutes or until golden. Toss at times.
Add your almonds in the honey, mix and... it's done !
Try also with roasted hazelnuts, walnuts, poppy seeds, sesame seeds, ...
